Gluten Free Can be Elegant and Yummy!

Allergies to gluten can be some of the most challenging, since gluten can be found in some of the most innocent looking foods. According to Wikipedia:

A gluten-free diet is a diet completely free of ingredients derived from gluten-containing cereals: wheatkamut and spelt), barley, rye, Malts and triticale, as well as the use of gluten as a food additivecoeliac disease,[1] the related condition dermatitis herpetiformis,[2] and wheat allergy.[1] in the form of a flavoring, stabilizing or thickening agent. One of my eldest son’s childhood friends had a severe gluten allergy, causing his family much grief, and consternation because in the 1990s food products did not include important ingredient information as they do today. Imagining some of my favorite foods growing up, and I cringe at the thought of  a child not being able to eat  pancakes, pastas, and my favorite….chocolate.|
